What does red light actually do?

Red light at 660nm works near the surface of your skin. With regular use it's associated with a firmer, smoother, more radiant-looking complexion. It's the wavelength most of the well-known devices are built around.

And near-infrared?

Near-infrared at 850nm is invisible to the eye but reaches deeper than red light can. It's the wavelength that takes a device from "surface glow" to something that works further down, and it's what cheaper colour-only masks leave out.

Why not just get a 7-colour mask?

Because the extra colours are mostly there to look impressive in an advert. Spreading power across seven colours means less of the two that matter. DermaPro concentrates on red and near-infrared instead.
